Sassy Mama's small salad cup recipe is a big crowd pleaser.
Ingredients
- 1/2 cup spreadable chive and onion cream cheese
- 1/4 cup sour cream
- 2 tablespoons chopped fresh dill
- 3 tablespoons chopped fresh parsley
- 1/4 teaspoon cracked black pepper
- 1 tablespoon grated parmesan cheese
- 30 mini phyllo shells
- 2 small salad cucumbers, thinly sliced
- 30 fresh peas
- About 6-10 grape tomatoes, cut in quarters
Instructions
- Cream: In a small bowl mix together the room temperature cream cheese and sour cream until smooth. Stir in the fresh herbs & parmesan cheese. Transfer the cream mixture to a quart size bag and snip the edges.
- Prep veggies: Prepare the vegetables by slicing cucumber thin and then cut each slice in half. Cut mini cherry tomatoes in half. Rinse and dry peas.
- Combine: Put the phyllo shells on a serving platter. Snipped the end of the Ziploc bag, and gently squeeze the filling into each cup to the top. garnish with a slice of cucumber, cherry tomato, and a pea.
