Meringue Trees
1 1/2 cups egg white
2 cups sugar
1/4 teaspoon Cream of tartar
flavoring extract of your choice
food coloring
Sprinkles
To prepare the meringue:
Fill a large stockpot with water and bring to a boil.
In a large glass or metal bowl, whisk together the egg whites, sugar, and cream of tartar.
Place the bowl into the water bath making sure that the bowl is large enough that it does not slip into the water.
Whisk quickly the mixture (so that the eggs do not cook) and continue doing this just until the sugar has melted. ***An easy test is to dip a spoon into the mixture and if you do not see granules then you’re ready to proceed.
Transfer the egg mixture to the bowl of an electric mixer.
Using the whisk attachment, slowly whisk together the eggs and sugar.
Carefully add 1/4 - 1/2 teaspoon of flavoring to the mixture.
Continue whisking on high until stiff peaks form and the meringue is glossy looking.
Add food coloring to the meringue at this time and beat together until the desired color is reached.
Spoon the meringue batter into a large pastry bag with a star tip.
Preheat oven to 200 degrees.
line 2 baking sheets with parchment paper.
Pipe 1/2 dollar sized circle onto parchment paper.
Then add another circle on top of that one and a smaller circle on top of that so it looks like a Christmas tree.
Continue in rows in the parchment paper.
Add sprinkles as you wish.
Put the trays into the oven and allow them to cook for two hours.
Turn off the oven and leave them overnight to dry out.
