Basic Crepe Batter

Basic Crepe Batter

  1. ¾ cup milk
  2. ¼ cup water
  3. 2 eggs
  4. 2 tablespoon melted butter
  5. 1 cup all-purpose flour

 

  1. Put the ingredients in a blender and mix on high for 1 minute.
  2. Batter will be super thin.
  3. Add more water, 1 tablespoon at a time as needed.

To cook crepes:

  1. Use a crepe pan or large nonstick skillet.
  2. Set the skillet on the stove at medium high heat.
  3. Brush the bottom of the pan with butter.
  4. Pour the crepe pan into the bottom of the pan and lift sides of pan to allow the batter to reach the edges.
  5. Cook for 2-3 minutes and then gently lift with a spatula or long wooden skewer to lift and flip over.
