Sweet and Sour Chicken

  1. 5 boneless skinless chicken breasts, cut into cubes
  2. 1 cornstarch
  3. 3 eggs, beaten
  4. Vegetable or canola oil
  5. 1 green pepper, cubed
  6. 1 red pepper, cubed
  7. 1 onion, cubed
  8. 1-2 cups fresh pineapple, cubed
  9. 1 cup sugar
  10. 3 tablespoon cider vinegar
  11. 1/3 cup ketchup
  12. 1 1/2 teaspoon garlic powder
  13. 1 1/2 Tablespoons soy sauce

  1. Preheat oven to 300 degrees and line a baking sheet with parchment paper and top with 4 sheets of paper towels.
  2. Heat the oil in a skillet over medium high heat.
  3. Using 2 shallow dishes put the cornstarch in one and the egg in the other.
  4. Add salt and pepper to the cornstarch and egg mixture.
  5. Dredge the chicken first in the cornstarch and then in the beaten egg.
  6. Carefully place each chicken piece in the hot oil and brown on all sides.
  7. You do not need to cook the chicken through, just brown the outside to get a crispy exterior.
  8. Remove the paper towels from the baking sheet. 
  9. In a bowl, combine the sugar, ketchup, cider vinegar, soy sauce and garlic powder.
  10. Pour the sauce over the top of the chicken. 
  11. Bake the chicken for 1 hour, stirring every 15 minutes.
  12. Add the veggies and pineapple the last 15 minutes and bake in oven.
  13. Serve over prepared rice.
