Sweet and Sour Chicken
- 5 boneless skinless chicken breasts, cut into cubes
- 1 cornstarch
- 3 eggs, beaten
- Vegetable or canola oil
- 1 green pepper, cubed
- 1 red pepper, cubed
- 1 onion, cubed
- 1-2 cups fresh pineapple, cubed
- 1 cup sugar
- 3 tablespoon cider vinegar
- 1/3 cup ketchup
- 1 1/2 teaspoon garlic powder
- 1 1/2 Tablespoons soy sauce
- Preheat oven to 300 degrees and line a baking sheet with parchment paper and top with 4 sheets of paper towels.
- Heat the oil in a skillet over medium high heat.
- Using 2 shallow dishes put the cornstarch in one and the egg in the other.
- Add salt and pepper to the cornstarch and egg mixture.
- Dredge the chicken first in the cornstarch and then in the beaten egg.
- Carefully place each chicken piece in the hot oil and brown on all sides.
- You do not need to cook the chicken through, just brown the outside to get a crispy exterior.
- Remove the paper towels from the baking sheet.
- In a bowl, combine the sugar, ketchup, cider vinegar, soy sauce and garlic powder.
- Pour the sauce over the top of the chicken.
- Bake the chicken for 1 hour, stirring every 15 minutes.
- Add the veggies and pineapple the last 15 minutes and bake in oven.
- Serve over prepared rice.
