To make: Thinly slice French bread and rub with olive oil bake in 350 degree oven for five minutes. Dice the tomatoes and allow excess liquid to drain. Finely dice shallots, garlic, and basil. Toss tomatoes, basil, garlic and shallots together with olive oil salt and pepper allow to rest for twenty minutes or longer. To serve top the French bread with tomato mixture and finish with parmesan cheese.
