Amanda's Recipe Collection: Momma's Meatloaf

Many of you know that in my spare time I enjoy to cook. I really like making gourmet dishes, but if you're like me, during the week there is NO time for that! This is a recipe for Meatloaf that I make.

Many of you know that in my spare time I enjoy to cook.  I really like making gourmet dishes, but if you're like me, during the week there is NO time for that!  This is a recipe for Meatloaf that I make.  And yes, the whipping cream in it makes it taste good :)  I prepare it on Sunday and then stick it in the oven during the week for an easy weeknight meal.

Ingredients:

(Feel free to use however much of the veggies you like - I usually eyeball it)

1/2 yellow onion, chopped

2 celery sticks, chopped

3/4 cup chopped carrots (I use the baby carrots)

1/2 green bell pepper, chopped

1 lb lean hamburger meat

1 lb ground italian sausage (I use ground turkey sausage and it tastes just as good)

2 cups dried bread crumbs (I use Italian Panko crumbs - you can find them in the baking aisle)

3/4 cup of whipping cream

2 eggs

salt & pepper

(Ketchup to dip meatloaf in)

DIRECTIONS:

Preheat oven to 350 degrees.

Saute all the chopped veggies over med. heat in 1 Tablespoon of butter until soft (about 7 minutes).

Add all ingredients (including cooled off veggies) (not the ketchup) in a large bowl.  Mix good (use your hands - it's the best way - just take off your rings before hand!). 

I put the meat mixture into 2 loaf pans.  If you don't have a loaf pan, wet your hands and shape meat mixture into a loaf and place in a bigger pan.

Bake at 350 degrees for about an hour.

I like to serve it with ketchup on the side, but you could also put it on top of the meatloaf.
