Autumn Salad
Ingredients:
3 cups arugula
3 cups spinach
1 pear, sliced thin
roasted pumpkin seeds
goat cheese
Directions:
Place arugula and spinach in a large bowl. Place pear slices, pumpkin seeds and goat cheese crumbles on top. Toss with Fall Vinaigrette. Serve immediately.
Fall Vinaigrette
Ingredients:
1/2 teaspoon mustard powder,
1/2 teaspoon sea salt, and
1/2 teaspoon sugar.
1 tablespoon rice vinegar
1 tablespoon fresh lemon juice.
1/4 cup extra virgin olive oil
Directions:
In a small glass mason jar with a lid, place mustard powder, sea salt, sugar, rice wine vinegar and juice of 1/2 a lemon. Put the lid on and shake to combine. Add in olive and shake again. Serve!
