Bayside Fritters With Tiki Sauce

3/4 lb tiny salad shrimp, chopped

2 green onions, chopped

1/2 red pepper, diced

1/2 yellow pepper, diced

2 garlic cloves, minced

1 egg

1/2 cup milk

3/4 cup Shawnee Mills all purpose flour

1 tablespoon unsalted butter

2 teaspoon Old Bay Seasoning

1/2 teaspoon salt

1/2 teaspoon black pepper

peanut oil for frying

1/2 cup Garden Club Pineapple preserves

1/2 cup Garden Club Grape jelly

1 teaspoon prepared horseradish

Pour oil into large dutch oven and heat till it reaches 375 degrees. In a medium sized sauce pan over medium high heat sauté the onion, peppers and garlic till tender. In a large bowl place the sautéed veggies, chopped shrimp, egg milk, flour, seasoning, salt and pepper. Mix till it is well combined. Using a small ice cream scoop drop spoonfuls of fritter batter into oil. Cook till browned on all sides. Remove from oil and dry on paper towel lined plate.

To make tiki sauce: Combine 1/2 cup pineapple preserves with 1/2 cup grape jelly. Stir to incorporate and then add in 1 teaspoon prepared horseradish. Serve!
