Caytie's Pear and Goat Cheese Tart
1 package of chilled puff pastry
2 pears
Goat cheese crumbles
Honey
Olive oil
Preheat oven to 400 degrees.
Line a baking sheet with parchment paper.
Place the chilled sheet of pastry on a lightly floured surface. Cut into 9 squares and place on a baking sheet at least one inch apart.
Using a sharp knife or mandolin, slice the pear into thin pieces.
Drizzle the pastry with olive oil and top with the pear slices. Flip up each pastry corner. Chill in the freezer for 10 minutes. (This allows maximum PUFF!) Remove the pastries from the freezer and bake for 15 minutes or until golden brown. Allow the pastry to cool slightly and then add goat cheese crumbles and drizzle with honey.
