Yield:
14 servings 8 slices each
Ingredients:
1 can (16 oz.) fat-free refried beans¼ C. salsa
1 tsp. Mexican seasoning
1 box (9 oz.) fully cooked seasoned beef strips, finely chopped
½ medium red pepper, finely chopped
1 jalapeno pepper, seeded and finely chopped
½ C. chopped green onion
¼ C. chopped cilantro
1 C. shredded low-fat cheese (1.5g fat per ounce)
14 flour tortillas (98% fat-free, 6 inch)
Directions:
In a medium mixing bowl, combine refried beans, salsa and Mexican seasoning.
In a large mixing bowl, combine beef, peppers, onion, cilantro and cheese.
Spread a thin layer of bean mixture on 1 tortilla.
Top with approximately ¼ cup beef mixture.
Roll up and place in an airtight container.
Repeat with remaining tortillas.
Refrigerate at least 4 hours.
Slice each roll into 8 slices.
