Together at the Table recipes
1 cup all purpose flour 1 cup yellow cornmeal
1/4 cup sugar 2 eggs
4 teaspoons baking powder 1 cup reduced fat or skim milk
3/4 teaspoons salt 1/4 cup cooking oil
1. Preheat oven to 425 degrees.
2. In a medium sized mixing bowl, stir together with a wire whisk all the dry ingredients.
3. Add the eggs, milk and cooking oil and stir with a spoon or electric mixer just until smooth. Do not overmix the batter.
4. Pour into a greased 9 inch square pan and bake for 20-25 minutes. (The cornbread will be brown around the edges).
