Sassy Mama: Health Stew

Sassy Mama is back with another healthy recipe. Today we are making a simple Health Stew.

Ingredients

1 pound lean ground beef

1 pound lean stew meat

3 cloves garlic, minced

1 onion, diced

6 cups beef broth

2 mushroom bouillon cubes

2 bay leaves

6 cups veggies, chopped (cabbage, peas, celery, carrots, zucchini, etc)

2 cups yellow potatoes, cubed

***Add whole grain barley or brown rice***

Directions

In a large stockpot, add 2 teaspoon oil to the bottom of the pan and heat to medium-high. Sauce the ground beef, lean stew meat and onion till meat is browned. Add the garlic and continue to cook for 2 minutes. Pour 6 cups of beef broth into pot. Add mushroom bouillon cubes and bay leaves. Add the remaining veggies and stir. Put a lid on the pot and simmer for 30 minutes. 15 minutes before serving add potatoes to cook just till fork tender. Serve with your favorite cornbread.
