Steakhouse Augratin Potatoes

  1. 4-5 russet potatoes, peeled
  2. 2 tablespoon olive oil
  3. 1 onion, sliced thin
  4. 2 tablespoon butter
  5. 2 cups white cheddar cheese, freshly grated
  6. 1 cup gruyere cheese, freshly grated
  7. 1/2 cup Parmesan cheese, grated
  8. 2 cups whipped cream
  9. 1 teaspoon salt
  10. 1/2 teaspoon white or black pepper


  1. Preheat oven to 350 degrees.
  2. Spray a 10-cup deep baking dish.
  3. Peel potatoes 1/8 inch thick on a mandolin or using a sharp knife. (Be careful. Very very thin) 
  4. Cook onions in a hot skillet with olive oil until onions are golden brown but not burned.
  5. This will take about 10 minutes over medium low heat.
  6. Once the onions are done cooking add the butter and stir together until melted.
  7. Remove from the heat and set aside. 
  8. In a large bowl, mix together the thinly sliced potatoes, 2 cups whipping cream, 1 1/2 cup cheddar cheese, 1/2 cup gruyere cheese and 1/4 cup of Parmesan cheese.
  9. Stir to coat the potatoes.
  10. Add the onions, salt and pepper.
  11. Stir together then pour into the prepared pan.
  12. Press the potatoes down into the baking dish and sprinkle with the remaining cheeses.
  13. Cook for 1 1/2 hours or until golden brown and bubbly.
  14. Remove from the oven and allow the dish to cool for at least 15 minutes before serving.
