Sweet Potato Latkes


  1. 1 lb sweet potatoes, peeled and coarsely grated
  2. 1/2 onion, grated
  3. 1/3 cup all-purpose flour (or gluten free baking mix)
  4. 1/2 teaspoon baking powder
  5. 2 large eggs, lightly beaten
  6. 1 teaspoon salt
  7. 1/2 teaspoon black pepper
  8. 1/4 teaspoon pumpkin pie spice
  9. 3/4 cup vegetable oil


  1. In a medium sized bowl, mix together the sweet potatoes, onion, flour, baking powder, salt, pepper, eggs and pumpkin pie spice.
  2. Heat the oil in a skillet over medium high heat.
  3. Use a 1/4 measuring cup to add sweet potato mixture to the hot skillet.
  4. Cook till browned on one side and then flip.
  5. Continue cooking till browned on all sides.
  6. Remove from the pan and set on a paper towel to drain.
  7. Serve with spiced apple chutney and sour cream.
