Two fresh tomatoes, diced
One cucumber, peeled and seeded
1/2 cup red onion, diced
2 cups watermelon, diced
One red pepper, seeded and diced
2 tablespoons olive oil
One lime, juiced
One jalapeño, seeded and diced
2 tablespoons fresh cilantro, chopped
Mix all of the ingredients together in a medium sized bowl. Add salt and pepper to taste. Serve with your favorite tortilla chips.
