Quick Collard Greens


  1. 2-3 pounds collared greens, stems removed & chopped
  2. 1/2 onion, chopped
  3. 2 tablespoon brown sugar
  4. 2 cups chicken stock
  5. 1 teaspoon garlic powder
  6. 1 tablespoon vinegar
  7. 1 smoked ham bone
  8. Salt and pepper


  1. Remove the stems from the fresh collared greens.
  2. Wash the greens well.
  3. Stack the leaves up one on top of the other till you get 5-6 leaves.
  4. Roll and cut into strips.
  5. Add the chicken stock, garlic powder, vinegar and brown sugar to the bowl of the Instant Pot or pressure cooker.
  6. Add 1/2 of the collared greens and saute over medium high heat till the greens reduce 1/2 in size.
  7. Add more greens till all greens are in the pot.
  8. Set the ham bone in the middle of the pot.
  9. Add the lid and pressure cook for 30 minutes.
  10. Add additional salt and pepper (as needed) once the greens are cooked.
