Preheat oven to 350°. Spray a loaf pan with nonstick cooking spray. In a medium size bowl mix together the butter, brown sugar, two eggs, vanilla and bananas until smooth. Stir in all of the dry ingredients just until combined. Stir in any optional “mix-ins” . Pour the batter into the prepared pan and bake for 50 to 60 minutes or until a toothpick comes out clean from the center of the loaf. Cool on a wire rack. Call Anna store in an air tight container or wrap well in plastic wrap and freeze for future use.
