1 clove garlic, minced
3 handfuls basil leaves (about 3 cups loosely packed leaves)
1/4 cup walnuts
1/4 cup parmesan cheese
1 T lemon juice
1/4 tsp salt
1/4 tsp cracked pepper
1/4 - 1/2 cup olive oil
Place all of the ingredients except olive oil in the bowl of a food processor. With motor running, gradually add olive oil until pesto reaches desired consistency. Taste and add more salt, pepper or lemon juice as desired.
Pesto Pasta
Cook some of your favorite pasta (orzo and bowtie pastas are great choices), and reserve some of the cooking water. Mix your pesto into the warm pasta, sprinkle in feta cheese, then drizzle with a little of the reserved cooking water to help keep the pasta moist and slightly melt the feta. Top with grape tomato halves.
Serve as a warm side dish, top with chicken for a main dish, or chill for a pasta salad.
Pesto Pizza
Top a prepared crust with pesto, mozzarella, parmesan, prosciutto and artichokes.
