Ingredients
• 4 firm white fish filets (Mahi Mahi, Swordfish, Sea Bass, Tilapia)
• olive oil
• 16 corn tortillas
• 1 bag coleslaw mix
• 1 bunch cilantro
• 1 cup cojita cheese (crumbled)
• fresh salsa
• mango slices
• Mexican Crema
Instructions
1. In a smoking hot grill pan (or outside grill) grill fish till cooked through. Remove from heat and place on a platter. Warm tortillas by wrapping them in a paper towel and microwave for 30 seconds. To prepare, simply top corn tortilla with 1/2 of a filet of fish, coleslaw mix, sprinkle with cheese and cilantro. Top with salsa and mango slices. Add a dollop of Mexican crema and eat!
