Ginger Dressing
1/2 cup minced onion
1/2 cup canola
1/3 cup rice wine vinegar (not seasoned)
2 tablespoons fresh ginger, chopped
2 tablespoons celery, chopped
2 tablespoons ketchup
4 teaspoons soy sauce
2 teaspoons white sugar
2 teaspoons lemon juice
1/2 teaspoon minced garlic
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Place all of the ingredients in a blender and blend till smooth. Place in a mason jar and refrigerate till you are ready to use. Serve over iceberg lettuce salad!
***This is also a great marinade for shrimp.
