Garlic Roasted Loaded Mashed Potatoes
- 8-10 potatoes peeled and cubed
- 1/2 stick unsalted butter
- 1 cup whipping cream
- 1 head of garlic
- 2 cups cheddar cheese, grated
- 3 green onions, chopped
- 1/2 cup crisp bacon crumbles
- Put the potatoes in a large stock pot and fill with water to cover.
- Boil the potatoes till they are fork tender.
- While the potatoes are boiling, preheat the oven to 375.
- Cut the top of the garlic head off, and drizzle with olive oil.
- Wrap in foil and then cook in the oven for 30 minutes.
- Once the potatoes are done boiling, drain the water and return the potatoes to the stove top and cook over medium heat until the water is thoroughly gone.
- Using a hand mixer, beat the potatoes with the butter and whipping cream.
- Add salt and pepper as needed.
- Squeeze the roasted garlic into the whipped potatoes along with the cheese, green onions, and bacon.
- Stir together and serve!
