Festive Thumbprint Cookies

  • 1 package sugar cookie mix
  • 1 stick unsalted butter, softened
  • 1 teaspoon vanilla paste
  • 2 eggs
  • various holiday sprinkles
  • buttercream frosting

  1. Preheat oven to 375 degrees and line a baking sheet with parchment paper.
  2. Using a hand mixer, beat together the cookie mix, butter, eggs and vanilla paste.
  3. Make quarter sized balls and roll in the sprinkles to cover completely.
  4. Place on the baking sheet. Use a 1/2 teaspoon to make an indention in the center of each ball.
  5. Bake to 8-11 minutes or until lightly golden brown.
  6. Allow the cookies to cool completely before adding frosting.
  7. Pipe the frosting into each of the indentions.
  8. Chill for 30 minutes before serving. Store in an airtight container

**To make Lemon Thumbprints: just add the zest of one lemon to the dough when mixing. Fill each indention with lemon curd and then dust with powdered sugar!
