Sautéed Brussels Sprouts and Sweet Potato

Sautéed Brussels Sprouts and Sweet Potato

  • 1 pound fresh Brussels sprouts, sliced in half
  • 2 cups fresh sweet potato, thinly sliced
  • 3 garlic cloves, chopped
  • Salt/pepper
  • Olive oil
  • Lemon juice
  1. In a large skillet heat the olive oil over medium high heat.
  2. Carefully add in the Brussel sprouts, sweet potatoes, garlic, salt and pepper.
  3. Stir together for 2 minutes and then add 3 tablespoons water to the pan and cover for 3 minutes.
  4. Remove the vegetables from the pan and squeeze fresh lemon juice over the top.
