Pumpkin Brittle

  • 3/4 cup sugar
  • 1/4 cup corn syrup
  • 3 tablespoon water
  • 3 tablespoon unsalted butter
  • 1 cup raw pumpkin seeds (also known as pepitas)
  • 3/4 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla paste
  • 3/4 teaspoon baking soda
  • Sea salt
  1. Line a baking sheet with parchment paper and spry well with nonstick cooking spray.
  2. In a large saucepan over medium high heat cook together the sugar, corn syrup, and water till it turns a light golden brown.
  3. Stirring constantly with a wooden spoon. (This will take about 12-13 minutes).
  4. Add in the pumpkin seeds, pumpkin pie spice and vanilla paste and cook for an additional 3 minutes.
  5. Stir in the baking soda and then CAREFULLY pour out the hot brittle onto the parchment paper and spread out a bit.
  6. Allow this to sit out for one hour and then break into pieces.
  7. Store in an airtight container.
