Garlic Roasted Loaded Mashed Potatoes

  • 8-10 potatoes peeled and cubed
  • 1/2 stick unsalted butter
  • 1 cup whipping cream
  • 1 head of garlic
  • 2 cups cheddar cheese, grated
  • 3 green onions, chopped
  • 1/2 cup crisp bacon crumbles
  1. Put the potatoes in a large stock pot and fill with water to cover.
  2. Boil the potatoes till they are fork tender.
  3. While the potatoes are boiling, preheat the oven to 375.
  4. Cut the top of the garlic head off, and drizzle with olive oil.
  5. Wrap in foil and then cook in the oven for 30 minutes.
  6. Once the potatoes are done boiling, drain the water and return the potatoes to the stove top and cook over medium heat until the water is thoroughly gone.
  7. Using a hand mixer, beat the potatoes with the butter and whipping cream.
  8. Add salt and pepper as needed.
  9. Squeeze the roasted garlic into the whipped potatoes along with the cheese, green onions, and bacon.
  10. Stir together and serve!
