Mashed Potato Pancakes

  • 3 cups mashed potatoes
  • 1 egg, beaten
  • 6 tablespoons all purpose flour
  • Diced green onion
  • 1/4 cup cheddar cheese
  • Applesauce and sour cream 
  • Canola or vegetable oil 
  1. Place a medium sized skillet on the stove and add oil.
  2. Heat to medium high.
  3. In a medium bowl mix together the mashed potatoes, egg, 3 tablespoon flour, green onion and cheddar cheese till combined.
  4. In a smaller plate add the remaining flour.
  5. Season with salt and pepper.
  6. Use a cookie scoop to portion out the pancakes.
  7. Gently flatten in your hands and then dredge in seasoned flour.
  8. Carefully place the pancakes in the hot oil and fry for 3-4 minutes or until browned.
  9. Flip the pancakes and brown the other side.
  10. Once the pancakes are done cooking place on a paper towel lined plate.
  11. Serve with applesauce and sour cream.
