Quick Roasted Salsa

Quick Roasted Salsa

  • 4 large tomatoes
  • 1 yellow onion, cut into wedges
  • 1 jalapeno, seeds removed (optional)
  • 1/2 red pepper
  • 1/2 green pepper
  • 1 bunch cilantro
  • 3 cloves garlic
  • 1 teaspoon sea salt
  • Olive oil
  1. Heat the grill or grill pan to medium high heat.
  2. Brush the peppers, onions and jalapeño with olive oil.
  3. Place the vegetables on the grill and cook till veggies are blistered.
  4. Remove from the grill.
  5. Place the tomatoes, onions, peppers, cilantro, and garlic in a food processor or blender.
  6. Pulse until salsa is chunky not liquid.
  7. Taste and add more salt as needed.
  8. Pour the salsa into a bowl with an airtight lid.
  9. Chill for 2-3 hours.
  10. Serve with your favorite tortilla chips.
