Amaretto Sweet Potato Mash

Ingredients:

  • 4 sweet potatoes, roasted in the oven/skins removed
  • 1/4 cup brown sugar
  • 2 tablespoon amaretto liquor
  • 1 teaspoon cinnamon
  • 1/4 cup whipped cream
  • 2 cups mini marshmallows
  • 1/4 cup chopped pecans

Directions:

  1. Preheat oven to 375 degrees.
  2. Prick the outsides of the sweet potatoes with a knife and cook in oven for 30-45 minutes or until cooked through.
  3. Remove from the oven and carefully remove the skins from the sweet potato.
  4. Place the sweet potatoes in a stock pot. Add in the brown sugar, amaretto, cinnamon and whipped cream.
  5. Beat together with hand mixer till smooth.
  6. Remove from the stock pot and place in serving bowl.
  7. Preheat oven to BROIL.
  8. Top the mashed sweet potatoes with marshmallows and chopped pecans.
  9. Place the bowl back in the oven and allow the marshmallows to brown.
  10. Serve warm!
