Pumpkin Vinaigrette

Pumpkin Vinaigrette

• 1/4 cup canned pumpkin puree
• 1/4 apple cider vinegar or balsamic vinegar
• 3 tablespoon maple syrup
• 1 teaspoon Dijon or grainy mustard
• 1 garlic clove, grated
• 1/2 cup olive oil
• 1/2 teaspoon salt
• 1/4 teaspoon pepper

1. Place all of the ingredients in a mason jar and shake till completely blended.
2. Drizzle over a fresh salad with apples and roasted pumpkin seeds.
