Heart Healthy Granola
2 cups whole rolled oats (aka old fashion oats)
1 cup unsalted nuts
½ cup unsweetened dried fruit, chopped
1 cup shredded coconut
2-3 tablespoons raw honey or agave nectar (or a combo of both)
2 tbsp coconut oil, liquified
½ tsp vanilla paste
Preheat oven to 325 degrees. Line a baking sheet with parchment paper. In a large mixing bowl, toss together all of the ingredients. Pour the ingredients onto the baking sheet and cook for 30 minutes. Stir the granola every 10 minutes to allow the granola to brown evenly. Remove from the oven and allow it to cool before packaging in an air tight container.
