Caytie's Oreo Cheesecake

1 family size package Oreos, divided

1/3 cup unsalted butter, melted

3 (8 ounce) package cream cheese, room temperature

3/4 cup sugar

3 eggs

1 tablespoon vanilla paste

1 container dark chocolate frosting

1 container milk chocolate frosting

Preheat oven to 350 degrees. Spray a springform pan with nonstick cooking spray. Crush 1/2 of the Oreos using a food processor or with a rolling pin. Pour the Oreo crumbs into a bowl and stir together with the melted butter. Press the cooking crumbs into the bottom of the pan. Beat the ROOM TEMPERATURE cream cheese with the sugar for 3 minutes until smooth. Add the eggs and vanilla paste. Continue to beat for 3 more minutes. Scrape the sides of the bowl frequently. Break the other 1/2 of the Oreos. Now place 1/2 of these broken Oreos into the batter. Beat to incorporate. Pour the cream cheese mixture into the springform pan and spread evenly. Top with the leftover broken cookies. Place the springform on a baking sheet. Fill the baking sheet with water. Bake the cheesecake for 45 minutes. Remove from the oven and allow it to cool and then chill for 4 hours or overnight before serving.
