Kathy's Spinach Salad w/ Poppy Seed Dressing
6 cups fresh baby spinach
1 cup sliced mushrooms
Croutons
Dressing:
1/2 cup vegetable oil
1/4 cup sugar
1/4 cup red wine vinegar
1 teaspoon Poppy Seed
3 Tablespoons minced garlic
1/4 cup grated Parmesan
In a mason jar, place all of the ingredients and then place the lid on top. Shake well. Pour over the salad and serve!
