Banana Breakfast Cookies
2 very ripe bananas
1 tablespoon melted butter
2 tablespoons peanut butter
1/4 cup sugar
1 egg
1 teaspoon baking soda
1 cup King Arthur white whole grain-flour
1 1/2 cups old fashioned oats
1/4 cup dark chocolate chunks
1/2 cup chopped pecans
Preheat oven to 350 degrees. Mix the bananas, peanut butter and butter in a medium sized bowl until smooth using an electric mixer. Add in the egg, vanilla paste, sugar, and baking soda. Then mix in the flour and oats till well combined. Stir in the chocolate chunks and pecans. Using a small cookie scoop place scoops of cookie dough on a parchment lined baking sheet and bake for 10 minutes. Cool on the counter and store the cookies in an airtight plastic container.
