Asian Chicken Lettuce Wraps

1 tablespoon olive oil

1 pound ground chicken (98% leans)

2 cloves garlic, minced

1 onion, diced

1/4 cup hoisin sauce

2 tablespoons soy sauce

1 tablespoon rice wine vinegar

1 tablespoons freshly grated ginger

1 teaspoon Sriracha, or more, to taste

1 can sliced water chestnuts, drained and diced

1/4 cup shredded carrots

2 green onions, thinly sliced

Kosher salt and freshly ground black pepper, to taste

1 head butter lettuce

In a large skillet over medium heat saute the ground chicken in olive oil with the onion and garlic till cooked through. While the chicken in cooking, whisk together the hoisin sauce, soy sauce, rice wine vinegar, ginger and Sriracha sauce. Pour the sauce over the ground chicken mixture and then stir in the water chestnuts and carrots. Cook till warmed through. Place the chicken in a large bowl sprinkled with green onions and serve with butter lettuce leaves.
