Beef Rouladen (Beef Rolls)

Beef Rouladen (Beef Rolls) is a delicious, easy German dish.

INGREDIENTS:
2-3 oz thin sliced sirloin
6 oz Dijon mustard
3 oz uncooked diced bacon
4 oz thin sliced onion
1/2 oz caraway seeds
1/2 oz Alamo seasoning
1 oz olive oil
6 oz beef stock

DIRECTIONS:
1. Pound out meat flat and spread Dijon mustard.
2. Saute bacon and onion separately.
3. Add Alamo seasoning and caraway seeds to bacon and onion. Cool bacon and onion.
4. Place bacon and onion into center, packing firmly.
5. Roll steak, secure tightly seam side down, and bake for about 30 minutes at 325 degrees.
6. Reduce beef stock by half.
7. Remove meat and add beef stock to deglaze pan.
8. Return meat to the pan and heat well and serve.

Can be prepared ahead and reheated. Accompaniments can be of your choice of starch and a vegetable.
