Ingredients:
1 pound boneless, skinless chicken breasts, cut into 1-inch wide strips
2 Tbsp. taco seasoning mix
2 Tbsp flour
1/2 green pepper, coarsely chopped
1/2 red pepper, coarsely chopped
1 cup frozen corn
1-1/2 cups thick and chunky salsa
1 cup Mexican style finely shredded four cheese
Instructions:
1. Toss chicken with taco seasoning and flour.
2. Put in the slow cooker.
3. Stir in vegetables and salsa; cover with lid.
4. Cook on low for 6 to 8 hours (or on high 3 to 4 hours).
5. Stir just before serving.
6. Top with shredded cheese.
* HINT: Add well drained, well rinsed black beans for additional fiber
