INGREDIENTS:
6 oz Filet of Talpia
2 oz seasoned flour with salt and pepper
1 large whipped egg
2 blanced asparagus spears
2 oz lump crabmeat
2 oz hollandaise sauce
2 oz olive oil
Hollandaise Sauce:
2 egg yolks
1 oz lemon juice (whip until well blended)
1/2 cup clarified butter
DIRECTIONS:
1) Dust the filet if talapia in seasoned flour.
2) Dip fish into whipped egg and pan fry in hot olive oil until golden brown on both sides.
3) Place two blanced asparagus spears on top of browned talapia and crab meat in between each spear. Top with hollandaise sauce to finish.
4) Serve with your choice of starch and vegetables.
