Chicken Cordon Bleu Salad

Bart & Nadia's Chicken Cordon Bleu Salad

1 boneless, skinless, chicken breast
Mrs. Dash® Salt Free  Seasoning (or other favorite low sodium herb blend) to taste
2 tablespoons shredded mozzarella cheese
1 thin slice ham (1 oz.)
small amount of oil to lightly cover bottom of skillet

  1. Place chicken breast between 2 pieces of plastic wrap.  Place on a hard surface and pound chicken with a mallet until about 1/4 inch thick.
  2. Place ham and cheese on top of the chicken leaving some uncovered area around the edges.  Fold or roll the chicken around the ham and cheese securing with a toothpick to hold the roll in place.
  3. Heat oil in skillet.  Add chicken and cook on medium heat.  Turn the chicken from side to side occasionally until entire surface is brown and chicken is cooked through.
  4. Let the chicken cool a few minutes, then slice crosswise to form small round pieces.  Serve on top of lettuce or other salad greens.

   Try Herbs de Provence to season this recipe.  Use a light touch with dried herbs--a little goes a long way.  Too much seasoning will overpower other mild flavored ingredients.
