Ingredients:
Butter-flavored cooking spray4 eggs
1 1/3 cups low-fat cottage cheese
12 ounces cooked potatoes, peeled and mashed
2/3 cup non-fat dried milk
1/2 cup diced red bell pepper
1/2 cup diced green onion
1/2 cup water
1/2 teaspoon salt
1/4 teaspoon ground black pepper
12 slices turkey bacon, cooked and crumbled
1 tablespoon light margarine
Directions:
1) Preheat oven to 350 degrees. Spray a 9-inch pie plate with butter-flavored cooking spray.
2) In a large mixing bowl, beat eggs with an electric mixer on medium until frothy. Add remaining ingredients and blend well. Beat on high for 1 minute. Pour into prepared pie plate. Bake uncovered for 45 minutes.
