Cranberry Bliss Bars
¾ cup unsalted butter, room temperature
1 ½ cup brown sugar
2 large eggs
¾ teaspoon vanilla extract
2¼ cups all-purpose flour
1½ teaspoons baking powder
¼ teaspoon salt
⅛ teaspoon ground cinnamon
½ cup dried cranberries
6 ounces white baking chocolate, coarsely chopped
Preheat oven to 350 degrees. Line a 9x13 baking pan with parchment paper “sling” for easy removal. Preheat oven to 350 degrees. In a medium sized bowl place the butter and then put in the microwave for 45 seconds to melt slightly. Remove from the microwave. Using an electric mixer beat in the brown sugar, eggs, and vanilla extract. In a separate bowl whisk together all the dry ingredients. Use a separate small bowl to hold the chopped dried cranberries and white chocolate. Add 2 tablespoons of the dry mixture to the chocolate and cranberries. Add the dry ingredients to the butter mixture and just mix mix until flour is incorporated. Stir in the white chocolate and cranberries. Bake for 25 -30 minutes or until a toothpick comes out of the center clean. Cool completely before frosting.
Frosting:
1 (8 ounce) block cream cheese, room temperature
1 cup powdered sugar
Zest of orange
1 cup white chocolate chips, melted
1 teaspoon vanilla paste
¼ cup cranberries, chopped
Beat together the cream cheese and powdered sugar till smooth. Stir in the orance zest and vanilla paste and then beat in the melted white chocolate. Spread the frosting over the bars and sprinkle with chopped cranberries. Cover with plastic wrap and chill in the refrigerator for 1 hour before cutting.
