Sassy Mama: Tuscan Tomato Dip

Sassy Mama is in the house and she's cooking up something delicious!


  1. 2 lbs. Roma or Campari tomatoes, cut into 1” pieces
  2. 4 cloves minced garlic
  3. 3 T. extra-virgin olive oil
  4. 3 T. balsamic vinegar
  5. 1 tsp. sea salt
  6. freshly ground black pepper
  7. 3 T. honey or brown sugar
  8. 1/2 c. chopped Kalamata olives
  9. 1/4 tsp. hot pepper flakes
  10. 1 tsp. finely chopped fresh thyme
  11. 1 tsp. finely chopped fresh rosemary
  12. 1 tsp. finely chopped fresh basil


Preheat oven to 450°. Cover a baking sheet with foil for easy cleanup. Combine the tomatoes, garlic, olive oil, vinegar, salt/pepper, and honey together in a large bowl. Transfer the tomato mixture to the baking sheet spreading evenly. Roast in the oven for 20 minutes until the tomatoes begin to shrivel a bit and juices bubble. Allow the tomatoes to cool. Then roughly chop into smaller bites. spoon the tomatoes into a serving bowl and then pour the remaining juices/spices from the baking pan over the top. Stir together the remaining fresh herbs & olives. Serve with toasted baguette crackers, pita or your favorite cracker. Store in an airtight container for up to a week.
