⅓ cup extra-virgin olive oil
In a small bowl or mason jar with lid, whisk/shake together the olive oil, sherry vinegar, Dijon mustard, and salt & pepper till thoroughly combined.
Prepare salad by laying Bibb lettuce leaves on a platter. place wedges or thick slices of tomatoes on top of the lettuce. Sprinkle with hunks of blue cheese and then add fried tomatoes all over the top. Drizzle with dressing before serving.
