Cooking expert Sassy Mama shows us how to make sushi rice!
2 cups sushi rice
2 cups cold water
2 Tbsp. sugar
1 teaspoon salt
1/3 cup rice vinegar
Most important step: Rinse the rice in a fine mesh strainer until it runs clear. Agitate the rice while rinsing to ensure that it is clear. Place the rice in a medium-sized saucepan or rice cooker. Add 2 cups water.
**If using the saucepan method: allow the rice and water to sit for 30 minutes. Bring rice to a boil and then immediately place a lid on the pot, reduce to medium heat and cool for 10 minutes. Remove rice pot from heat and sit covered for 15 minutes.
**If using rice cooker, follow manufacturer instructions.
While rice is cooking, in a small saucepan, bring the rice wine vinegar, sugar and salt to a simmer. Once rice is cooked, pour the vinegar and sugar mixture over the rice and fold. Allow the rice to sit on the counter for 2 to 3 hours before using. It is even better if you let it sit like this overnight.
