Pear Clafoutis

Pear Clafoutis

  1. 3 tablespoons unsalted butter, melted and cooled slightly, plus more for brushing
  2. 2/3 cup all-purpose flour
  3. 1/3 cup granulated sugar
  4. 1/4 teaspoon salt
  5. 1 1/4 cups whole milk
  6. 3 large eggs
  7. 1 vanilla bean, split lengthwise and seeds scraped
  8. 2 teaspoon Amaretto
  9. 3 pears, peeled/cored and sliced thin
  10. Brown turbinado or sugar in the raw
  11. Confectioners’ sugar, for dusting


  1. Preheat the oven to 400°.
  2. Lightly brush a 9-inch square baking dish or 9-inch pie pan with butter.
  3. In a blender, beat pulse to combine the melted butter, flour, sugar, salt, milk, amaretto, eggs and vanilla seeds.
  4. Mix on high in the blender till there are no lumps. 
  5. Arrange the pears fanned out in the bottom of the prepared baking dish.
  6. Place the prepared baking dish on a baking sheet.
  7. Pour the batter over the pears filling the container till it is almost full.
  8. Bake for about 30 minutes minutes.
  9. Remove from the oven and turn the broiler on HIGH.
  10. Sprinkle 1-2 tablespoons of the raw sugar over the top and until the clafoutis is set and golden.
  11. Remove from the oven and chill for 10-15 minutes before serving.
