Elote Street Cornbread Muffins

  1. 1 box cornbread mix
  2. 1 egg
  3. 3 tablespoon butter, melted
  4. ¾ cup buttermilk
  5. 1 cup fire-roasted corn
  6. ¼ teaspoon grated parmesan cheese
  7. ½ cup shredded cheddar cheese
  8. ¼ cup mayonnaise
  9. Zest of 1 lime
  10. 1 teaspoon chili seasoning blend

 

  1. Preheat oven to 350 degrees.
  2. Spray a muffin tin with nonstick cooking spray.
  3. Add all of the ingredients in a medium sized bowl.
  4. Mix the ingredients together till there are no lumps.
  5. Use an ice cream scoop to fill each of the muffin cups 2/3 full.
  6. Bake for 25-30 minutes or until cooked through.
  7. Allow the muffins to cool for 10 minutes in the pan before removing.
  8. Serve with chili or beans.
