Greek Zucchini Fritters

  1. 1 1/2 - 2 cups zucchini, grated
  2. 8 green onions, chopped
  3. 3 tablespoons dill
  4. 2 eggs
  5. 3/4 cup feta cheese, crumbled
  6. 1/4 teaspoon nutmeg
  7. 1/2 cup flour
  8. Salt and pepper to taste
  9. Olive oil


  1. Drizzle olive oil into a medium sized skillet over medium high heat.
  2. In a a large bowl, mix together the rest of the ingredients.
  3. Use a 1/2 cup measuring cup to portion out the fritters and set into the hot skillet.
  4. Cook for 4 minutes on each side or until browned.
  5. Serve with tzatziki sauce. 

** Make these in a large batch and freeze for future use, reheat in a 30 degree oven for 20 minutes or in a microwave!**
