Mom’s Cinnamon Zucchini Bread

  1. 2 ¼ cups sugar
  2. 1 cup vegetable oil
  3. 3 eggs
  4. 3 cups all-purpose flour
  5. 1 teaspoon salt
  6. 1 teaspoon baking powder
  7. 1 teaspoon baking soda
  8. 1 tablespoon cinnamon
  9. 2 cups grated zucchini
  10. 1 tablespoon vanilla
  11. 1 cup pecan or walnuts, chopped


  1. Preheat oven to 350 degrees.
  2. Spray 2 loaf pans with nonstick cooking spray.
  3. In a large bowl, whisk together the oil, sugar, and eggs till blended.
  4. Mix the dry ingredients together in medium sized bowl.
  5. Stir in the vanilla and zucchini into the batter.
  6. Slowly stir while adding in the dry ingredients until well incorporated.
  7. Pour half the batter into each baking pan.
  8. Tap the pan on the counter to release air bubbles.
  9. Bake in the oven for 1 hour or until a toothpick comes out clean from the center.
  10. Store in the refrigerator.
