Cowboy Soup

  1. 1 pound 93% lean ground beef, browned
  2. 1 cup onion, chopped
  3. 2 cups mushrooms, chopped
  4. 1 can diced tomatoes
  5. 1 red pepper, chopped
  6. 1 tablespoon minced garlic
  7. 1 cup shredded carrots
  8. 1 cup barley
  9. 4 cups beef stock
  10. 2 cups water

 

  1. Brown the meat in a large soup pot with the onions.
  2. Drain off any excess grease and return the pot to the stovetop.
  3. Stir in the water and stock along with the mushrooms, pepper, and shredded carrot.
  4. Bring to a boil and stir in the barley and cook according to package instructions.
  5. Add salt and pepper to taste.
