Green Chili Jalapeño Creamed Corn

  1. 24 ounces frozen corn
  2. 1/2 cup heavy whipping cream
  3. 1 stick unsalted butter
  4. 1 tbsp sugar (or honey/agave)
  5. ¼ tsp salt
  6. ¼ tsp white pepper
  7. 8 oz jalapeño cream cheese
  8. 1 can green chilies, drained


  1. Place all of the ingredients in the Instant Pot or pressure cooker and secure the lid.
  2. Turn the pressure to HIGH and cook for 3 minutes.
  3. When the cook cycle is complete, perform a Quick Release.
  4. Open the lid, stir, and enjoy!

***You can also do this recipe on the stovetop or in a slow cooker, just simmer everything together till the cream cheese is melted into the corn and the corn is bubbly.***

Mix-Ins: add crumbled bacon, sharp cheddar cheese, green onions, diced ham or anything else that sounds yummy.

Dip Option: Make a double batch and chill 1/2 of the creamed corn overnight. Stir in 1/4 cup sour cream and serve with scooped tortilla chips. YUM!
