Pool Perfect Candy Cookies
- ½ cup unsalted butter, room temperature
- 1 cup granulated sugar
- 1 cup brown sugar
- ¾ cup creamy peanut butter
- 3 large eggs
- 1 tablespoon vanilla
- 1 cup all-purpose flour
- 3 ½ cup quick cook oats
- 2 teaspoon baking soda
- ½ teaspoon salt
- 1 (11 ounce) package semi-sweet chocolate chips
- 1 (10 ounce) M&M’s mini chocolate baking bits
- Preheat oven to 350 degrees.
- Line a baking sheet with parchment paper.
- Cream together the butter, peanut butter, granulated and brown sugars together for 2 minutes or until creamy in a large bowl with a stand mixer or hand mixer.
- Slowly beat in the eggs and vanilla.
- In a medium bowl, mix together the flour, salt, baking powder and quick cook oats.
- Slowly add the dry ingredients to the butter mixture one cup at a time until mixed together.
- Add the chocolate chips and M&M’s slowly.
- Allow the cookie dough to sit for 20 minutes on the counter before baking.
- Using a cookie scoop, set dough onto baking sheet but make sure to allow 2 inches between the cookies.
- Gently press the cookies down so that they are not mounded on top.
- Bake for 12-14 minutes or until cookies are golden brown yet still soft.
- Remove the cookies to a cooling rack to cool. Enjoy with a big cup of milk!
